Tortilla Pancake with Sunny Side Up Eggs, Cheese & Pickled Onions

Pickled red onions

2 red onions, sliced

4 tbsp apple cider vinegar

1 tbsp sugar

Freshly ground pepper

Fried eggs

8 eggs

Rapeseed oil

Freshly ground pepper

4 tortilla pancakes

145g Audu Topping with Cheddar

2 avocados, sliced lengthwise

75g mixed salad leaves

Sriracha chilli mayo

Method

  1. Start by quick-pickling your red onions. Place the onions in a bowl and toss them with the rest of the ingredients. Let them sit until they are needed.
  2. Carefully crack your eggs onto a medium-hot pan with oil – preferably use a large pan with space for the tortilla pancakes. Cook them until they have a golden outline and then remove them from the heat.
  3. Use the same pan to warm your pancakes. Warm them one at a time and sprinkle them with Audu Topping with Cheddar. When the cheese has melted, remove them from the heat.
  4. Arrange your salad leaves on top of the cheese, followed by the avocado.
  5. Finally, place 2 eggs on each pancake and top with pickled red onions and chilli mayo.
