Tortilla Pancake with Fried Eggs, Cheese & Pickled Onions
Ingredients
Pickled red onions
2 red onions, sliced
4 tbsp apple cider vinegar
1 tbsp sugar
Freshly ground pepper
Fried eggs
8 eggs
Rapeseed oil
Freshly ground pepper
Others
4 pcs. food pancakes
140g Audu hybrid cheddar
2 avocados, sliced oblong
75g mixed salad leaves
Sriracha chili mayo
How to proceed
- Start by flash-pickling your red onions. Place the onions in a bowl and toss them with the remaining ingredients. Leave them until you need them.
- Carefully beat your eggs in a medium-hot pan with oil – use a large pan with room for the pancakes. Fry them until they get a golden outline and then remove them from the heat.
- Use the same pan to warm your pancakes. Warm them one at a time and sprinkle them with Audu hybrid cheddar. Once the cheese has melted, remove from the heat.
- Arrange your lettuce leaves on top of the cheese followed by the avocado.
- Finally, place 2 eggs on each pancake and top with pickled red onions and chili mayo.
