Potato Rösti With Cheese, Serrano & Fresh Herbs
Ingredients
10 potato röstis, premade, take them out well in advance
140g Audu Hybrid Mozzarella
150g crème fraîche 18%
100g serrano, shredded into smaller pieces
1 small red onion
½ bunch parsley, chopped finely

Waffle iron
Method
- Preheat your oven to 160 degrees Celsius and line a baking sheet with baking paper.
- Heat your waffle iron and spray it with a little bit of neutral-flavoured oil.
- Place two röstis in the waffle iron at a time and press them together so they are completely flat. Let them “bake” for about 3 minutes. Then top with Audu Hybrid Mozzarella and let it melt while your waffle iron is open. Then remove them from the iron and arrange them on the baking sheet.
- Put your röstis in the oven until they are crispy. Approximately 10 minutes.
- Arrange your röstis on a platter. Top each with a small tablespoon of crème fraîche, followed by a small piece of serrano, red onion and fresh parsley.
