Potato Rösti With Cheese, Serrano & Fresh Herbs

Ingredients

10 potato röstis, premade, take them out well in advance

145g Audu Topping with Mozzarella

150g crème fraîche 18%

100g serrano, shredded into smaller pieces

1 small red onion

½ bunch parsley, chopped finely

Method

  1. Preheat your oven to 160 degrees Celsius and line a baking sheet with baking paper.
  2. Heat your waffle iron and spray it with a little bit of neutral-flavoured oil.
  3. Place two röstis in the waffle iron at a time and press them together so they are completely flat. Let them “bake” for about 3 minutes. Then top with Audu Topping with Mozzarella and let it melt while your waffle iron is open. Then remove them from the iron and arrange them on the baking sheet.
  4. Put your röstis in the oven until they are crispy. Approximately 10 minutes.
  5. Arrange your röstis on a platter. Top each with a small tablespoon of crème fraîche, followed by a small piece of serrano, red onion and fresh parsley.
