Potato Rösti With Cheese, Serrano & Fresh Herbs

Ingredients

10 potato röstis, premade, take them out in good time

145g Audu hybrid mozzarella

150g creme fraiche 18%

100g serrano, chopped into smaller pieces

1 small red onion,

½ bunch parsley, chopped finely

Oil spray

Waffle iron

How to proceed

  1. Preheat your oven to 160 degrees C and line a baking sheet with baking paper.
  2. Heat your waffle iron and spray it with a little unflavored oil.
  3. Place two röstis in the waffle iron at a time and squeeze them together so they are completely flat. Let them “bake” for about 3 minutes. Then top with cheese and let it melt while your waffle iron is open. Then remove them from the iron and arrange them on the baking sheet.
  4. Put your rösties in the oven until they are crispy. Approximately 10 minutes.
  5. Arrange your rösti on a platter. Top each with a small tablespoon of sour cream, followed by a small piece of serrano, red onion and fresh parsley.
