We are Audu. And we love dairy products.

QUESTIONS AND ANSWERS

Jakob Skovgaard, Jesper Colding and Paul Cornillon are behind the Audu brand and founded the company PlanetDairy in January 2022. PlanetDairy has development facilities in Agro Food Park in Aarhus.

Audu is inspired by the first creature in Norse mythology Auðumbla. Auðumbla means the “milk-rich cow”, which was a primeval cow that gave milk to the giant Ymer. From Ymer’s body the world was formed.
Auðumbla licked Buri out of a salt stone – he was a primeval giant and ancestor of the gods. He became the father of Borr, and when Borr married Bestla, together they had Odin, Vile and Ve known as the first gods

Audu is available grated in a variant with mozzarella and plant ingredients, and in a grated cheddar with plant ingredients variant.

Audu blends an animal part from the cow with a plant-rich part from legumes, coconut oil and rapeseed oil. This preserves the flavor that comes from cow’s milk – and enriches it with plant ingredients that have much lower CO2 emissions in their production.

Audu is manufactured in Skanderborg by Falengreen.

Audu is available from wholesalers in Denmark.

You can use Audu exactly the way you eat and use cheese. We strive to make products where most people don’t notice a difference in taste, functionality and nutrition.

We’ve carefully selected the ingredients we use to maintain a varied protein content. Audu contains both animal protein and plant protein from legumes and has a fat content on par with similar types of cheese. Audu products are a great contribution to a healthy and varied diet.

A greenhouse gas is any gas in the atmosphere that absorbs and re-emits heat, keeping the planet’s atmosphere warmer than it would otherwise be. The main greenhouse gases in the Earth’s atmosphere are water vapor, carbon dioxide (CO2), methane (CH4), nitrous oxide (N2O) and ozone.
Greenhouse gases occur naturally in the Earth’s atmosphere, but human activities such as burning fossil fuels increase the level of greenhouse gases in the atmosphere, causing global warming and climate change.

“CO2e” is a term that describes different greenhouse gases in a common unit. For any amount and type of greenhouse gas, CO2e is the amount of CO2 that would have the corresponding effect on global warming.
An amount of greenhouse gas can be expressed as CO2e by multiplying the amount of greenhouse gas by its warming potential. For example, the greenhouse gas methane (the gas that cows belch out) is 25 times more warming than CO2. Thus, if 1 kg of methane is emitted, this can be expressed as 25 kg CO2e (1 kg CH4 * 25 = 25 kg CO2e).

We have chosen to work with CarbonCloud, an independent body that provides CO2 calculations using a scientific methodology. We will always link our carbon declarations to CarbonCloud or another independent 3rd party.
All aspects of the product’s manufacturing are factored into its CO2 impact. This includes feed, agriculture, production and transportation/storage in the entire value chain.

The plant part of our products emits significantly less CO2 in their production than the animal part. This reduces the product’s overall CO2 profile. The first products from Audu have at least 40% less CO2 content compared to similar cheeses that are 100% animal-based.
