Mac n´cheese with Audu Mild, broccoli and parsley

Have you tried mac ‘n’ cheese? This classic American comfort food is both easy and quick to make, and with its ultra-creamy interior and deliciously crispy exterior, it’s something the whole family can look forward to. In our version, we’ve chosen to add a fresh contrast to the dish with crispy broccoli and flavorful parsley.

And we’ve made it all extra creamy by adding generous amounts of Audu Mild. Delicious!

Ingredients
300 g macaroni
50 g butter
50 g all purpose flour
6 dl milk
280 g Audu Mild
Salt and pepper
1 bunch parsley, finely chopped
1/2 tsp. paprika
1 big broccoli head, finely chopped
30 g breadcrumbs

Instructions

Cook the macaroni
Preheat oven to 180°C (fan-forced). Bring a suitable amount of salted water to boil in a medium-sized pot. Cut the broccoli florets and chop finely. Add the macaroni and broccoli to the boiling water and cook them for about 3 mins, until they are al dente. Drain them in a colander, rinse with cold water, and let them drip dry.

Make the cheese sauce
Melt the butter in a large pot over medium heat, stir in the flour, and gradually add the milk while stirring constantly to avoid lumps. Let the sauce come to a boil while stirring until it thickens. Add Audu Mild, stir until it’s melted, and season the cheese sauce with salt and pepper to taste.

Bake your mac n’ cheese and serve
Fold the chopped parsley and paprika in the sauce together with the macaroni and broccoli.  Spread it all in an ovenproof dish, sprinkle the breadcrumbs on top, and bake your mac ‘n’ cheese in the oven for about 15 mins, until the breadcrumbs are golden. Serve your mac ‘n’ cheese in deep plates. 

Tip: If you like, you can add extra flavor and crispiness by sprinkling some fried bacon on top of the dish.
