Creamy green pasta with Audu Mild, spinach and crispy bacon
It is said that you eat with your eyes, and we can only confirm that statement with this green dream of a pasta dish. As soon as you look at it, it’s hard not to take a proper mouthful of the delights.
Fresh spinach, crispy bacon, and an extra creamy sauce with Audu Mild – so simple yet so delicious!
400 g pasta of your choice
300 g spinach
4 tbsp. oil
1 tbsp. lemon juice
200 g bacon
1 onion, finely chopped
1 clove garlic, finely minced
4 dl cooking cream
140 g Audu Mild
Salt and pepper
Cook the pasta
Bring a sufficient amount of salted water to a boil in a large pot for the pasta. Add the pasta to the boiling water and cook it until it’s al dente. Drain it in a colander, rinse with cold water, and let it drain.
Prepare the spinach mixture
Place the spinach in a tall container along with the oil and lemon juice, and blend everything into a smooth mixture with an immersion blender.
Prepare the sauce
Fry the bacon until crispy in a large pot over medium to high heat. Remove the crispy goodness and fry the onion and garlic in the bacon fat for about 2-3 mins until translucent. Chop the bacon into small pieces, and add half to the pot with the onions. Add the cooking cream and cook until it has thickened.
Finish the pasta dish, and serve
Toss your pasta and Audu Mild in the sauce and season with salt and pepper. Remove the pan from the stove, fold the spinach mixture into your pasta, and divide the pasta into deep plates. Sprinkle each portion with the rest of your bacon and serve.
Tip: You can also top the pasta dish with some chopped salted almonds to add extra crunch to the dish.
